Kosher for Pesach Recipes

In the past when I’ve thought about Pesach food, I always turn to the fake foods…lots of matza meal, matza pizza, matza lasagna and other replacements.  Over the past couple years though, I’ve been sticking to fish or chicken and veggies and lots of fruit.  Below are some of my recipes from the past nine months since I started Mah Zeh Taim that can totally work for Pesach.  Enjoy!  Chag Kasher v’Sameach!

Almond Crusted Salmon with Chard Stalk Tabouli

Replace the tabouli with quinoa and you’re ready to go

Chickpeas with Tomatoes & Zucchini

Perfect for the lucky Sephardim who get to have kitniyot

Lemon Caper Chicken over Roasted Baby Brussel Sprouts

If you can’t find K for P capers, just skip them.

Mango Chipotle Glazed Salmon with Rainbow Quinoa

No need to change anything!

Mexican Chicken with Quick Guacamole

No need to change anything!  Note:  Some consider cumin to be kitniyot.  Check with your rabbi!

Oven Meatballs

Replace bread crumbs with matza meal

Pesto Turkey Burgers

Replace bread crumbs with matza meal

Quinoa Salad

Tilapia with Mango Salsa

No need to crisp up the tilapia…the mango salsa will give you all the flavor you need!

Quinoa Chili over Spaghetti Squash

Always a favorite, especially when you’re carb craving.  Some consider cumin to be kitniyot.  Check with your rabbi!

Sicilian Vegetable Soup

If you’re looking for a nice cold soup, go with this one!

Smokey Artichoke & Red Onion Quiche

Nix the crust and it’s perfect (you can totally switch the cheese if you need to)

Spinach & Feta Stuffed Tilapia

No need to change anything!

Tomato Roasted Garlic Soup with Smoked Mozz Croutons

Melt cheese on matza instead of bread and it’ll work great!
