Thai Chicken Wraps

I don’t remember the last time I had Thai food.  It’s not in so many kosher restaurants and I guess I sort of forget about it when I’m cooking.  Well, when I accidentally ordered broccoli slaw instead of coleslaw, I figured Thai was the way to go.  With a quick peanut sauce and an easy saute of the chicken and veggies, this one is perfect for a weeknight!

Sauce Ingredients
1/4 cup sugar (I found the sauce a bit sweet, so next time I’ll probably cut this down)
1/4 cup peanut butter (I used soynut butter)
3 tablespoons low sodium soy sauce
2 tablespoons canola or vegetable oil
2 tablespoons water
2 cloves garlic (I grated it in with a microplane)

Filling Ingredients
1 lb thin cut chicken breasts
2 tablespoons canola or vegetable oil
1 tablespoon salt
1 tablespoon pepper
2 1/2 cups broccoli slaw
1/2 red onion, thinly sliced
1 teaspoon fresh ginger (grated with a microplane)
3 leaves fresh basil
Wraps (I used whole wheat tortillas)

Salt and pepper each side of the chicken breasts.  Cut them into small pieces.  Heat 2 tablespoons oil. Add the chicken and let it cook until both sides are lightly golden and it is cooked through.

While the chicken is cooking, get the sauce going.  Combine all of the ingredients in a small saucepan and heat on low until the sugar and peanut butter are fully dissolved.  Then turn off the heat (it will thicken on its own).  Use the extra sauce on your meatloaf, London broil or roast chicken!

In the same pan that you cooked the chicken in, add the onion, slaw, ginger and basil.  Saute for 3 minutes.

Prepare your wrapping station!  On each wrap, shmear some of the peanut sauce, add some chicken and a heaping spoon of the slaw mixture.  Wrap and enjoy!

Super easy, pretty light and oober delicious!  This is one for the recipe books, folks!

    Hi Jen,

    This is Nathan. I’d like to lobby for some non-chicken recipes. Though I guess I could substitute tofu for chicken.
