Three Picnic Perfect Salads

Today we went upstate for the day and went apple picking!  What a fun day!  The problem was that we decided to go super last-minute so I had no time for shopping or menu planning for the picnic we wanted to have.  I threw together these three immensely easy salads, some fresh bread (thank you bread machine) and cheese.  Quick and easy, these are ideal for picnics, but make excellent sides for any meal!

White Bean Salad
1 can Cannellini Beans, drained and rinsed
3 scallions
2 teaspoons chopped, fresh cilantro
1/2 teaspoon Adobo seasoning
1 teaspoon olive oil

Just combine all of these ingredients and toss for a protein rich, flavorful bean dish.

Celery Salad
5 stalks celery, sliced
1 pear, chopped
1/4 cup craisins
1/4 cup chopped pecans
1/2 cup fat-free mayo
2 teaspoons cider vinegar
1 teaspoon celery seed
2 tablespoons honey
1 teaspoon sugar
salt and pepper to taste

A twist on the traditional waldorf salad, combining all of these ingredients and refrigerating for a few hours before eating makes it a creamy, sweet treat.

Quinoa Salad
1/2 cup quinoa, prepared as package indicates
1/4 red bell pepper, finely diced
1/4 green bell pepper, finely diced
1 small onion, finely diced
1 cup spinach, chopped
1 tablespoon olive oil
1 teaspoon garlic powder

I had this leftover from Shabbat so it was especially easy.  Toss the ingredients together and it’s got so much flavor and yummy smells that you’ll want to eat the whole bowl!

Picnics are fun and don’t need to be a lot of work.  With these salads, some breads and cheeses, you’re good to go for a lovely day in the crisp fall weather.  No need to pack dessert…you’ll be full of apples!

    They would go great with a loaf of warm crunchy bread!

    All three salads have appeal. I am not a fan of celery but this salad looks great. I want to try these and hopefully add them to my list of salads.
