Spicy Black Bean Burgers

Summer is about barbeques.  Everyone always seems to be eating burgers and hotdogs!  Since I’m not a red-meat fan, I’m always on the look-out for yummy alternatives and this week I tried a couple!  This first one is super easy and, of course, brings in my love of Mexican food!

Ingredients (Makes 4 burgers)
1 can black beans (Goya is the best)
1 medium white onion
2 large cloves garlic
1/2 jalapeno
1/2 red bell pepper
1 teaspoon garlic salt
2 tablespoons chopped cilantro
1/2 cup flour

1 tablespoon oil (for cooking)

In the food processor, puree the garlic and jalapeno (you don’t want to bite into any huge chunks!)  Then add the onion and red bell pepper and chop.

Add the black beans and pulse the food processor so that there are still some chunks of black beans.  You want to keep the texture!  Add chopped cilantro.  Add flour and pulse so that it is fully mixed.

Heat oil in frying pan.  Form bean mixture into patties and cook for 3 minutes on each side.  If the patties still feel very soft, pop them in the oven for a few minutes so they firm up.

Serve on a hearty roll (like a challah roll) with sliced red onion, red bell pepper and lettuce (and a slice of cheese if you’re interested).  You can even top it with some fresh salsa for added flavor.

It’s a nice twist on the meaty burger that is filled with flavor and gives you some solid protein.  They also freeze really well, so set some aside or make a double batch!
